This is a great, simple recipe. Yummy potato soup is always a good option.
Dorie offers lots of options, plenty to try in different seasons. For this version, I stuck with the classic, and opted to purée though the other chunkier versions sound fabulous. In a nod to my niece who lives in Baltimore, I chose the suggestion of Old Bay as a garnish. A few gougeres I had in the freezer and then baked, rounded out this comfortable dish.
Definitely a great recipe and a launching pad for such a satisfying meal!
